Copa Di Vino’s Tasting Tom in the Historic Sunshine Mill in The Dalles, Oregon opened Memorial Day Weekend 2010. Copa Owner James Martin is the visionary in charge of restoring the mill, an historic 130-year-old property that includes the 150-foot-tall, 10-story Sunshine Mill building and grain silos.

Previously slated for demolition, James established redevelopment plans, saving the buildings and restoring the historic site to become the home for Copa Di Vino and his other wineries. The restoration efforts aided in funding and creating a $3.5M street improvement in front of the mill property and a roundabout as the eastern gateway entrance to the city.

Restoration plans also call for a rooftop infinity vineyard and garden, a 10-story wine cellar, an 80-foot climbing wall, and artisan plaza, and a mill property interpretive center. Future plans include a cheesery, conversion of the concrete silos into wine tanks, and a hotel consisting of round rooms built into the silos.
